This tiny and colorful little caviar you’ll typically find it festively topping your sushi makis and nigiris. The actual roe color is bright orange, and the flavor is mild with a crunchy texture. Use it to roll up some authentic sushi at home or to garnish appetizers and hors d’ouevres.

Ebiko is the eggs of Shrimp (Ebi) or Prawns. It is also less expensive than tobiko and more frequently used with sushi rolls. Its color is usually dull orange or red, before dying them with food coloring to make them look brighter.
