Soft-shell crab is a crab that is in the molting stage. This process is called ‘molting’. As the crab grows, it outgrows its shell and it is time for a new coat. The crab crawls out of the shell and is ‘soft’ at that stage. This crab scales 18 times during the first 3 years and is very vulnerable during that period. The Soft-shell crab is actually periodically “soft” and is therefore seasonal. The best Soft-shell crab comes from the waters from Alaska to Argentina and is better known as the Blue Crab and has a strong similarity to the Blue swimmer crab, which is also available as a “soft shell” variant. Once molting has taken place, the soft-shell crab is immediately frozen. The Soft-shell crab is not traded fresh.
This crab has recently molted and is still soft. The product comes from a small packer that has a really ultra-fresh quality. Soft shell crabs are usually deep fried.
